Fresh strawberries have a lustrous red colour, are not bruised, are dry and firm to the touch. The calyx is always fresh and green. Eat strawberries as soon as possible after the purchase. If they need to be stored, then do so for maximum 48 hours in the refrigerator

If strawberries have been stored in the refrigerator, do not eat them too chilled. Let them warm up again. Fruit will only release its sugars at a temperature of 18°C. If you are in a hurry, you can quickly dip the strawberries in a warm water before removing the calyx. This should only be done after washing. Otherwise the strawberries will soak up too much liquid and lose some of their aroma.
